Adapted from a Trader José (Joe’s) Recipe
Super Quick Tortilla Soup:
1 can of black beans
1 can of chicken broth 32 oz
1 can of corn
1 can of diced tomatoes 28 oz.
12 oz. salsa
1 cup of shredded chicken/turkey
Heat broth to a low boil. Add everything else except chips on medium heat for 10 minutes. Add a handful of tortilla chips, broken. Serve hot. Add grated cheese for variation.
So call me crazy, I actually crock-potted a turkey before Thanksgiving to test it out. Jsarr said it was one of the best turkeys he’s ever had, I just need to add more spices. It was VERY tender and WAY easier to get all the meat out. JSarr said “it was 1 million and 1/2 times easier to get the meat”. So if you ever get a small enough turkey, you might want to try it. It seems so easy!
